Dulce de Leche Filled Mocha Cupcakes


Earlier we discussed a full on caramel cupcake recipe. Today, we shall be discussing something of a similar dissent but instead of cooking the caramel filling from sugar, like we did last time, we shall be making it from condensed milk. Interesting right? This specific filling is famously known as the dulce de leche. And the cupcake itself, well imagine your favorite caramel coffee magically turned into a cupcake!

Mocha is a combination of chocolate and coffee. This cupcake has a mocha base, is filled with a dulce de leche filling, topped with a decadent mocha whipped cream topping and drizzled with a little more dulce de leche. So, overall, the cupcake has a coffee flavor imbedded upon it inside out.

Ingredients

Mocha cupcakes

· ½ c butter unsalted

· ¾ c strongly brewed coffee

· 1/3 c dark cocoa powder

· 1 tbsp espresso powder

· 1 egg

· 1/3 c buttermilk

· 1 c all-purpose flour

· 1 cup sugar

· 1 tsp baking soda

· 1/2tsp salt

Dulce de Leche

· 1 can sweetened condensed milk

· Pot of boiling water

Mocha Whipped Cream

· 2 c heavy cream

· ¼ c powdered sugar

· 3 tbsp dark cocoa powder

· 1 tsp espresso powder

· 1 tsp vanilla

Directions

Mocha Cupcakes

1. Preheat oven to 350F and line a cupcake tray with cupcake liners.

2. Melt the butter in a saucepan over medium heat.

3. Add the coffee, cocoa powder and espresso powder and whisk until smooth until the mixture thickens. Set aside to cool.

4. In a separate bowl, whisk the egg and buttermilk.

5. Pour the chocolate mixture into the egg and buttermilk bowl and mix until smooth.

6. Sift together the flour, sugar, salt and baking soda and pour in the wet ingredients. Mix until fully incorporated.

7. Pour the batter into cupcake tins and fill ¾ way through.

8. Bake for about 20 minutes or until a toothpick inserted comes out clean.

9. Cool and remove the center of each cupcake with an apple corer to make room for the caramel filling.

Dulce de Leche

1. Remove the paper from the can of condensed milk and wrap it in foil.

2. Place in a pot filled with boiling water until completely submerged and cook for about 7-8 hours.

3. Remove the can from the water and cool.

Mocha Whipped Cream

1. Combine the cream, sugar, cocoa, vanilla and espresso and whisk until smooth.

2. Chill overnight.

3. Remove the next day and whisk on high until still peaks form.

Assembly of Cupcake

Cut out the centers of the cupcakes and fill with the dulce de leche. Frost with the mocha whipped cream and drizzle with remaining dulce de leche. Bon appétit!!!
