Red Velvet Cupcakes You Will Surely Enjoy

Red velvet cupcakes are tasty and easy to prepare. With their bold color, you will surely get enticed with its creamy frosting and toppings.

Some may get the impression that red velvet cupcakes are quite difficult to prepare. In coming up with an enticing and tasty cupcake, you will need the following ingredients: 60 grams unsalted butter, 150 grams caster sugar, 10 grams cocoa powder, 1 large egg, 120 ml buttermilk, ½ teaspoon vanilla extract, 20 ml red food coloring, 150 grams plain flour, ½ teaspoon salt, ½ teaspoon bicarb soda, 1 ½ teaspoon white wine vinegar. For cream cheese frosting, you will need the following ingredients: 125 grams cream cheese, 300 grams icing sugar and 50 grams unsalted butter.

In preparing your red velvet cupcakes, you would have to pre-heat the oven first to 180 C. After that, you would have to line up cupcakes pans with lining paper. Put in the sugar and butter in a medium bowl and mix it altogether with an electric mixture until you achieve a fluffy and light texture. In a separate container, you would have to put in the food coloring, vanilla extract and coca powder. Mix them together until you achieve a thick paste. Then, add in the paste to the butter mixture and beat it thoroughly until the color of the past is mixed evenly with the batter. When mixing the ingredients, make sure you scrape down any stray batter from the sides of the mixing bowl. You can use a spatula with mixing and scraping the ingredients. Make sure you mix the ingredients altogether in order to achieve a smooth mixture.

You can now add in the buttermilk and mix it well. Simply repeat the remaining milk and flour until you achieve a smooth mixture. Slowly add in the bicarb, vinegar and salt and mix it for a couple of minutes. Now, you are ready to bake the cupcakes. Scoop in a heaped tablespoon of mixture into each paper case. Bake the cupcakes for about 20 to 25 minutes. In order to check if the cupcakes are already done, you can insert a toothpick at the center of the cupcake. If the toothpick comes out clean, then the cupcakes are already done. Once the cupcakes have already cooled, you can now remove them in the tray and place them on a wire to cool completely.

Using a food processor or electric mixer, beat the icing sugar and butter. Now, dice the cream cheese into smaller cubes the subsequently add it into the mixture. You have to beat the mixture until all the ingredients are completely combined. Continue beating the frosting on a medium-high speed until you achieve a light and fluffy mixture. You can pipe the cream cheese on top of the cupcakes. You can also use ice cream scoop to dollop the frosting.
